1/2 tsp coffee powder (optional)
1 tsp vanilla essence
3/4 cup oil (I used canola oil)
1 1/2 cup powdered sugar (brown or white)
a pinch of salt
METHOD
Take chopped nuts and tutti-frutti in a bowl and mix well. Pour grapes juice over it and keep aside for 2-3 hours. If you don't have time soak in hot boiling juice or water and soak for 30 minutes.
Sift together flour, cinnamon powder, grated nutmeg, baking soda and baking powder. Keep aside.
Beat together egg and sugar, add oil and beat again well. Add coffee powder, pinch of salt and vanilla essence. Mix well. Add flour mix in 3-4 batches mixing meanwhile.
Separate grape juice from the nuts. Add nuts in the batter. Now add leftover strained juice little by little making batter for cake, I added only half of the juice or else my batter would have become too thin.
Pour the batter in the greased pan and bake at 180 degree Celsius for 35-40 minutes or till skewer comes out to be clean. My cake was ready in 35 minutes.
Let cake come down to room temperature. Dust icing sugar and serve this Christmas!!
